How It’s Made (process)

  1. Oil & fraction selection: Palm/palm kernel or other suitable fats are refined and fractionated to target lauric/non-lauric profiles.

  2. Primary production: Interesterification and/or blending build the triglyceride structure and SFC curve for coating performance.

  3. Separation/conditioning: Filtration and polish to low impurities; antioxidants added as specified for stability.

  4. Cooling & forming: Controlled crystallization to promote β′ (beta-prime) crystals; cast into blocks/pellets.

  5. Standardization/QA: Slip point, SFC at 10/20/30 °C, peroxide/FFA, and temper behavior verified; COA issued.

Suggested Dosage

General: Use as the fat phase in compound/coating formulas; trial recommended.

By application

  • Compound coatings/enrobing: 100% of fat phase (with appropriate emulsifier)

  • Filled bars/creams: 20–60% of filling (texture-targeted)

  • Frozen dessert inclusions/variegates: 10–40% of inclusion matrix

  • Bakery icings & toppings: 15–35% of finished formula
