How It’s Made (process)

  1. Feedstock prep: Refined edible oils are converted to mono-/diglycerides via glycerolysis; food-grade acetic anhydride prepared.

  2. Primary production: Acetylation of monoglycerides forms acetylated monoglycerides (ACETEM) with targeted functionality.

  3. Separation & polish: Neutralization, washing, and filtration to remove residues and minimize color/odor.

  4. Drying & finishing: Liquid grades filled hot; powder grades flaked, milled, and sieved to target granulation.

  5. Standardization/QA: Acid value, mono content, acetyl value, and performance tests verified; COA issued.

Suggested Dosage

General: 0.1–0.8% w/w; trial recommended.

By application

  • Cakes / sweet bakery: 0.2–0.6% (baker’s % on flour)

  • Buns / breads / laminated: 0.2–0.5%

  • Confectionery fillings/coatings: 0.15–0.50%

  • Aerated desserts / whips: 0.10–0.40%

  • Margarine / shortening: 0.10–0.50% of fat phase
