How It’s Made (process)

  1. Feedstock prep: Refined edible oils → mono/di-glycerides; food-grade lactic acid prepared.

  2. Primary production: Esterification of mono/di-glycerides with lactic acid to form LACTEM.

  3. Separation & polish: Neutralization, washing, filtration to reduce residues, color, and odor.

  4. Drying & finishing: Liquid grades filled hot; powders flaked/milled/sieved for fast dispersion.

  5. Standardization/QA: Acid value, mono content, functionality and microbiology verified; COA issued.

Suggested Dosage

General: 0.1–0.8% w/w; trial recommended.

By application

  • Dairy whips/frozen: 0.10–0.40%

  • Breads/buns/cakes (on flour): 0.20–0.60%

  • Confectionery fillings/coatings: 0.10–0.40%

  • Desserts/mousses: 0.10–0.35%
