How It’s Made (process)

  1. Feedstock prep: Food-grade sorbitol is dehydrated to sorbitan; edible fatty acids prepared from refined oils.

  2. Primary production: Esterification of sorbitan with fatty acids yields sorbitan esters (Span-type).

  3. Separation & polish: Neutralization, washing, and filtration for low color/odor.

  4. Drying & finishing: Flaked/milled (powder) or conditioned (liquid) to target handling and dispersion.

  5. Standardization/QA: Acid value, saponification value, HLB (low-HLB range), and performance tests verified; COA issued.

Suggested Dosage

General: 0.05–1.0% w/w; trial recommended.

By application

  • Dairy whips/frozen: 0.10–0.40%

  • Cakes/buns: 0.20–0.60% (baker’s % on flour)

  • Confectionery fillings/coatings: 0.10–0.50%

  • Sauces & dressings: 0.10–0.50%

  • H&B/Pharma liquids: 0.10–0.60% (base-dependent)

Sorbitans are low-HLB partners; pair with high-HLB polysorbates to fine-tune oil/water balance.
