How It’s Made (process)

  1. Feedstock prep: Refined edible oils undergo glycerolysis to produce mono-/diglycerides.

  2. Primary production: Distillation concentrates monoglycerides to high purity for consistent functionality.

  3. Polish & filtration: Removal of residual catalysts and color; deodorization as required.

  4. Drying & finishing: Flaked and milled to controlled particle size for easy dispersion.

  5. Standardization/QA: Monoglyceride content, iodine/acid values, and performance tests verified; COA issued.

Suggested Dosage

General: 0.1–0.8% w/w; trial recommended.

By application

  • Breads/buns/cakes: 0.2–0.6% (baker’s % on flour)

  • Whipped/frozen dairy: 0.10–0.40%

  • Confectionery fillings/coatings: 0.10–0.50%

  • Chocolate/compounds: 0.05–0.30%

  • Margarine/shortening: 0.10–0.50% of fat phase
